(Batch makes ca. 10 pancakes)
1 cup flour
Pinch of salt
2 1/2 cups milk
3 eggs
2 Tbs butter
Mix flour and salt in a bowl. Add half of the milk and whisk to a smooth batter. Add the remaining milk, eggs and melted butter.
For best result, use a cast iron pan. Make sure you give the iron ample time to heat up before pouring the first batter into the pan.
Serve immediately with fresh squeezed lemon and confectioners' sugar ... OR ... maple syrup for an US version.
