1 cup part-skim ricotta cheese
1 Tbs honey
1/2 tsp vanilla extract
Mix ricotta cheese, honey and vanilla until mixture is smooth. Refrigerate at least 2 hours.
3 Tbs balsamic vinegar
1 1/2 Tbs brown sugar
16 oz strawberries, hulled and quartered
1 Tbs fresh basil
In a small saucepan, combine the vinegar and sugar. Stir until sugar has dissolved. Bring mixture to a boil and reduce to a simmer; heat for 3 minutes. Remove from pan and allow to cool completely. In a mixing bowl, combine strawberries and basil with the vinegar mixture. Divide equally among 4 glasses. Top with ricotta cream. Serve chilled.
